Today’s post is a mouth~watering apple recipe
that is kind of a throwback for me
to when I worked
in my late~teens and early~20’s at an
in my late~teens and early~20’s at an
apple tree and pick~your~own
Christmas tree farm
in the Apple Hill country
in the Apple Hill country
of Camino and Pollock Pines, California.
The Blair brothers and their families
owned and ran the farm
and every year
they hired seasonal students to come and help sell
apple and cherry pies in their on~site
bakery and store.
Other students would take care of the
Christmas trees brought into
the wrapping and selling area
after each family had gone out into the forest,
had chosen their favorite Christmas tree
and had brought it back to us
to wrap and wring~up…
Which leads me to today’s recipe!

{that’s my tongue drooling, ha ha…}
Apple Hill Spice Cake
2 cups sugar
1/2 cup vegetable oil
2 eggs
Mix these together then add:
4 cups of peeled and chopped apples
about 4 medium~sized apples
*FYI ~ if you use tart apples, add a touch more sugar to sweeten and
subract a bit of sugar if you are using a really sweet apple. I learned
this trick from an old boyfriend’s mother who was a wonderful
baker! This works for all fruit cakes and pies, too.
In a second bowl, sift together:
2 cups all~purpose flour
{*today I used self~rising flour ~ trying to use up}
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
2 tsp. baking soda
{*I halved this for today’s recipe}
***Can add nuts, dried raisins or cranberries as desired
or any other ingredient you’d like to adapt this recipe
and make it your own!
{*I added chopped walnuts for a little crunch}
Make a well in the center of the dry mixture.
Add the apple mixture to the dry mixing thoroughly.
Pour into a greased 9″ x 13″ glass baking pan
baking at 350 degrees for 1 hour.
Add more time until an inserted
cake tester or knife comes out clean.
Do try out this recipe ~ it’ll fast become
a family fall favorite!
